Brookfield Farm

Ailbhe Gerrard, the driving force behind Brookfield Farm, is a farmer, beekeeper, craft maker, and agricultural researcher. Following her experiences in Dublin and abroad, she returned to her family’s farm to set up the business.

At Brookfield Farm, Ailbhe’s creativity shines as she crafts entirely natural and traditionally handmade gift products, utilising the raw honey and hives she diligently tends. Her artisanal beeswax dinner candles are meticulously dipped and hand-poured, and her scented beeswax candles are infused with delightful botanical essential oils. These unique hive gifts from Brookfield Farm have earned accolades and recognition.

Brookfield Farm encompasses several aspects of rural enterprise, including a diverse farm featuring crops, sheep, bees, and trees. Ailbhe is also deeply involved in agricultural research, education, and consultancy. Furthermore, she runs a craft business centred around hive products and offers agri-tourism experiences, including farm tours, honey tasting, and craft demonstrations.

The working farm also included a “Barn” indoor space, that is suitable for hosting events, such as corporate meetups and private events. Onsite catering can be provided for these events, ranging from lunches, snacks to high end Feast style Private Dinners for upmarket guests, having recently hosted the Sabina Higgins, wife of the Irish President, for one such event. 

Field Exchange

Field Exchange creative agriculture programme, led by Ailbhe and hosted on Brookfield Farm provides farmers, food producers, artists, experts and the interested public space, time and community to collaborate. Using creativity to help change Irish agriculture from high input to regenerative.

Recently successful in gaining funding for another iteration of Field Exchange in 2024 and 2025, structured around 2 agricultural creativity festivals with artists working with farmers and technical partners. Field Exchange partners with the Irish Agroforestry Ireland Forum (IAF) and the Dry Stone Wall Association of Ireland (DSWAI) together with artists’ interventions. 

As a result of Field Exchange 2022, some of the impacts both internationally, nationally and locally for the project and Brookfield Farm were significant, including winning the European Price for Farming Social Innovation from SIMA Worldwide, representing the Creative Climate Action Projects at the National Ploughing Championships (September 2022). Ailbhe Gerrard was recognised for her work as Climate Ambassador with an Outstanding Achievement award and awarded Sustainability Champion 2023 by Image Magazine and PWC.  

Agricultural research and practice is an ongoing interest for Ailbhe. She has a Master of Science degree in Organic Farming from Scotland’s Rural College (SRUC) and in Environment and Sustainable Development from University College London.

Awards

In 2016 Ailbhe was awarded Nuffield Agricultural Scholar 2016Her research report focused on adding value to farm produce and reaching customers directly. 

Ailbhe was also awarded a scholarship on the International Federation of Organic Agriculture Movements (IFOAM) Organic Agriculture Leader Development Programme 2015 and the Masterclass programme 2017.

Brookfield Farm became the first winner of the RDS Sustainable Farming, Sustainable Living Awards 2019.

Over the years Ailbhe has been selected for Acorns, the Rural female entrepreneur programme 2015 & 2016 & 2018. As well as consistent media interest includes features and articles in national press and radio, including; RTE TV, Farmer’s Journal, Irish Country Magazine, Irish Times, etc
